Towy Collective was founded by Stephen Evans, a hospitality and leisure CEO / MD with experience across Gordon Ramsay Restaurants, Tonkotsu, GBK / Clapham House and Nando’s.
Stephen’s career combines senior operating leadership with international growth, franchising, licensing, estate expansion, property, investor engagement, fundraising, M&A, turnaround and board-level governance.
He has led and supported growth across premium, casual and scalable hospitality formats, from global brand expansion and franchise development to site acquisition, estate strategy, capex deployment, operational improvement and institutional investment.

Tonkotsu
Managing Director with full P&L responsibility. Opened 6 restaurants, grew total sales by £6.3m, tripled annualised site EBITDA and led a £5m institutional fundraise with YFM Equity Partners.
Gourmet Burget Kitchen / Clapham House Group plc
Development Director, reporting to the CEO and shareholders. Opened 25 restaurants, deployed £23m capex and contributed approximately £40m of run-rate sales.
Nando’s
Acquisitions Manager during rapid UK estate growth. Acquired 37 restaurants over 3 years, delivering an average ROCE of 35%.

Non-Executive Director of a £25m+ turnover multi-services business, providing board-level governance, financial oversight and commercial challenge.
